Fattoria del Sole (Factory of the Sun) is the only Artisanal factory of Fresh Italian cheese in the market. We offer the best brands in quality, taste and sustainability. Every item produced in our factory has been tested, tasted and selected as the best products to offer our customers.
Fattoria del Sole produce more than 17 different kinds of FORMAGGIO including Fresh Mozzarella, Mozzarella Light, Cherry Mozzarella, Mozzarella Di Bufala, Mozzarella Rouleau, Mozzarella Sheet, Burrata, Scamorza, Affumicata, PROVOLONE, Aged Provolone, RICOTTA, Taleggio, Gorgonzola, Strachino, PECORINO and Caprino.
Our dairy products are the fruits of decades of experience in hand-crafted productions. The factory is an Artisanal factory with no automated machines or artificial flavors, which increases the quality of our cheeses without disturbing the natural equilibrium or rhythm of the production. 100 kilos of fresh milk produce 28 kilos of fresh cheese. Every day, our products are made fresh from our family to yours.
Fattoria Del Sole has the only Buffalo Ranch in the MENA region, Water Buffaloes were imported from a reputable farm of one of the partners in Italy who is specialized in genetic selection to come up with a special diary breed. The farm was set up in the Beqaa Valley where special attention is given to the Buffaloes to produce the freshness and the exquisite taste of our products. To ensure quality control, the best grass and hay is being imported from Italy. The hygiene of our farm and milk is our priority to provide a fresh healthy product with a relatively short shelf-life.
Fattoria’s offers also the market a range of low-salt Organic cheeses from Halloumi, Halloumi Light, Akkawi, Double Crème, Labne Goat & Goat cheese. Fattoria keeps the salt content of its products down in part so it can be served as light and healthy choice to an increasingly health-conscious clienteles.
Our Story
Our story begins in 1997, when Mr. Naji Khairallah, who spent over 30 years in Italy, was having dinner in a Beirut restaurant and asked for fresh mozzarella and the waiter brought to the table the yellow, imitation kind, “Khairallah recalled”. He thought: “why don’t we set up a Fresh Mozzarella Factory in Lebanon?” And he made that dream come true.
The factory was established in a partnership with 2 Italians who follow the best traditions passed down through generations of master cheese makers. The advantage of Fattoria’s Del Sole product range is its freshness and absence of any artificial additives. Italian imports have a shelf-life of one to two months because of all additives, whereas Fattoria’s Del Sole Mozzarella lasts 20 days and Ricotta up to 10 days because of no any kind of additional additives.
The Mozzarella di Bufala Campana is produced exclusively with pasteurized fresh whole Buffalo milk, from registered Italian Mediterranean buffaloes. Quite unfortunately for the “Buffalo mozzarella lovers” spread in the world, the diffusion of this specialty outside the production area is limited by a severe intrinsic constraint: “real” Mozzarella loses its wonderful flavor fast. People living within the production area would in fact typically refuse as “too old” a Mozzarella made only two days before! For this reason, the taste of mozzarella must be enjoyed in the region where it is produced and that is why Fattoria Del Sole was established originally to give the pleasure of enjoyment of the real taste of Fresh Mozzarella.
